Ingredients

  • 225 g flour
  • 1 tsp Baking powder
  • 50 g butter
  • 50 g sugar
  • 150 ml milk
  • flour (for dusting)
  • 300 g fresh strawberries
  • 200 g strawberry jam
  • 250 g clotted cream

Instructions

    Combine the flour and baking powder in a mixing bowl. Cut the butter into cubes and rub it into the flour-baking powder mixture until crumbly. Stir in the sugar, then make a well in the center. Pour in the milk and stir to combine. On a floured surface, knead with your hands into a smooth dough. Add more flour or milk as needed until the dough no longer sticks to your fingers.

    Preheat the oven to 200°C fan. Line a baking tray with parchment paper. Divide the dough into 12 portions and shape each into round buns. Place them on the prepared tray with space between, and bake for 10–12 minutes (test with a skewer).

    When the scones are risen and golden brown, remove from the oven and cool on a wire rack.

    Wash the strawberries, drain, and slice most of them. Halve the scones horizontally, spread strawberry jam on each half, add a dollop of clotted cream, and arrange on a plate with sliced strawberries as garnish.
