Savory Waffles with Salmon

Ingredients
- 200 g waxy potatoes
- Salt
- 1 handful dill
- 200 g smoked salmon
- 250 g crème fraîche
- 2 tbsp lemon juice
- 0.5 tsp lemon zest
- Pepper (freshly ground)
- 200 g Flour
- 1.5 tsp Baking Powder
- 2 Eggs
- 60 g softened butter
- 250 ml milk
- butter (for the waffle iron)
Instructions

Wash the potatoes thoroughly and boil in salted water for 25-30 minutes.

Rinse the dill, shake dry, finely chop and set aside about two-thirds. Reserve four nice slices of salmon, cut the rest into fine strips. Mix crème fraîche, lemon juice, zest; fold in salmon and dill, season with salt and pepper.

Drain the potatoes, let them steam off, peel and press through a potato ricer.

Combine flour, baking powder, and a pinch of salt; whisk with eggs, butter, and milk until smooth. Fold in the pressed potatoes.

Oil and preheat the waffle iron.

Pour 2-3 tbsp of batter onto the iron and bake successive golden waffles. Serve each topped with a dollop of crème fraîche and salmon.
