Ingredients

  • 1 tbsp Rapeseed Oil
  • 8 eggs
  • 4 tbsp milk (1.5% fat)
  • Salt
  • freshly ground white pepper
  • 4 sprigs dill
  • 0.5 lemon
  • 150 g Smoked salmon
  • 4 tsp horseradish (from jar)

Instructions

    Heat the oil in a non-stick pan. Whisk the eggs with milk and season with salt and pepper. Pour the mixture into the pan and cook, stirring, for about 4 minutes until set.

    Meanwhile rinse the dill, shake dry and optionally pluck a few leaves. Cut the lemon into wedges.

    Divide the scramble onto four plates and garnish with smoked salmon. Arrange a teaspoon of horseradish and a lemon wedge on each plate, sprinkle with the plucked dill leaves if desired. Garnish with dill sprigs and serve immediately.
