Ingredients

  • 150 g soft butter
  • 4 eggs
  • 1 pinch salt
  • 250 g flour
  • 250 ml milk
  • 250 g fresh spinach
  • 1 onion
  • 1 tbsp butter
  • Salt
  • pepper (ground)
  • nutmeg (ground)
  • oil (for the waffle iron)
  • 250 g cream cheese
  • 4 tbsp whipping cream
  • 2 Garlic cloves
  • Salt
  • pepper (ground)
  • 2 tbsp lemon juice
  • 3 tbsp finely chopped parsley
  • thyme (for garnish)

Instructions

    Whisk butter with eggs and salt until fluffy, then gradually add flour and milk while stirring. Let the batter rest for about 30 minutes.

    Wash spinach thoroughly, rinse, and drain. Peel and finely chop onion; sauté in hot butter until translucent, add spinach and cook for about 3 minutes. Season with salt, pepper, and nutmeg, let cool. Squeeze out excess liquid from spinach, finely chop again, and fold into the batter. Preheat waffle iron to medium heat, lightly oil it, and bake waffles golden brown, then cool.

    For herb cream cheese, mix cream cheese with whipping cream until smooth, stir in minced garlic. Season with lemon juice, salt, and pepper.
