Ingredients

  • 3 eggs
  • 100 g Parmesan (1 piece)
  • 250 g whole wheat flour
  • 1 tsp Baking powder
  • 1 pinch salt
  • 375 ml milk (3.5% fat)
  • 2 tbsp Rapeseed oil

Instructions

    Separate the eggs. Beat egg whites with a pinch of salt into stiff meringue and set aside. Grate parmesan. Whisk yolks with cheese, flour, baking powder, salt and milk into a smooth batter. Let rest for 20 minutes.

    Preheat the waffle iron and lightly oil it. Fold the meringue into the batter. Pour portions into the iron and bake golden waffles one at a time. Serve warm or cold.
