Ingredients

  • 150 g butter
  • 4 eggs
  • 1 pinch salt
  • 250 g flour
  • 250 ml milk
  • 1 tsp garden herbs
  • Salt
  • pepper (from grinder)
  • nutmeg
  • oil (for waffle iron)
  • 250 g low-fat quark
  • 100 g whipping cream
  • 1 Garlic clove
  • Salt
  • pepper (from grinder)
  • 1 tbsp Lemon Juice
  • 3 tbsp parsley (dill finely chopped)
  • 6 Apples
  • 6 tbsp water
  • 1 tsp cinnamon

Instructions

    Whisk butter with eggs and salt until frothy, sift in flour, continue whisking, fold in milk and herbs, let batter rest for about 30 minutes, season with salt, pepper and nutmeg.

    Heat waffle iron to medium heat, lightly oil it, then cook waffles gradually until golden yellow and serve with herb quark.

    Beat cream very stiffly and fold into the quark. Peel garlic, squeeze it in, add lemon juice, salt, pepper and herbs, taste and adjust seasoning.

    Peel, core and chop apples, steam gently with water until soft, add cinnamon and blend to a puree, serve alongside the waffles.
