Savory Tomato Muffins

Ingredients

  • 300 g flour
  • 0.5 tsp Salt
  • 2 tsp Baking powder
  • 150 g freshly grated Parmesan
  • 5 tbsp olive oil
  • 40 dried tomatoes (in oil)
  • 2 tbsp pine nuts
  • 300 ml buttermilk
  • 1 egg
  • 12 paper cups (for the muffin tin)

Instructions

    Place the paper cups into the depressions of the muffin tin. Preheat the oven to 180°C fan.

    Combine flour, salt, baking powder and half of the cheese. Mix olive oil with chopped tomatoes and pine nuts, buttermilk and egg. Quickly stir in the dry mixture and fill the cups. Sprinkle remaining parmesan on top.

    Bake for about 30 minutes in the preheated oven. Remove, let cool slightly in the tin, then take out and allow to cool completely.
