Ingredients

  • 1 tomato
  • 60 g ricotta
  • 2 tsp Tomato paste
  • 1 tsp mixed Italian herbs (frozen)
  • Salt
  • Pepper
  • 3 slices whole‑grain bread (small slices)

Instructions

    Wash the tomato and cut off the stem end in a wedge shape. Quarter the tomato, remove seeds, and dice into small cubes.

    In a small bowl mix ricotta with tomato paste, herbs, and diced tomato. Season with salt and pepper to taste.

    Spread the tomato‑cheese mixture on two slices of bread, stack them together, and place the third slice on top as a lid. Cut diagonally once and pack tightly for take‑out.
