Savory Scones (Dairy-Free & Eggless)

Ingredients
- 1 sour apple (e.g., Boskop)
- 1 tbsp Lemon Juice
- 2 handfuls herbs (parsley, oregano with flowers)
- 250 g flour
- 0.5 tsp Salt
- 2 tsp Baking powder
- 50 g vegan margarine
- 150 ml spelt milk
- flour for dusting

Peel the apple, remove the core and grate the flesh. Mix with lemon juice. Rinse the herbs, shake dry, then finely chop leaves and flowers.

Preheat the oven to 220°C (425°F) with top and bottom heat and line a baking sheet with parchment paper.

In a bowl combine flour, salt, and baking powder. Add small pieces of margarine and spelt milk. Gently mix without overkneading to keep the dough tender. Fold in the apple mixture and herbs until all ingredients are moist. On a floured surface roll out 1–2 cm thick or press flat with hands, then cut rounds 6–7 cm in diameter. Place on the sheet and bake in the middle of the oven for about 15 minutes.
