Ingredients
- 1 egg
- 1 yolk
- 50 g sugar
- 1 pinch salt
- 100 g Soft Butter
- 100 ml milk
- 1 untreated orange (juice and zest)
- 75 g raisins
- 300 g wheat flour
- 2 tsp Baking powder
- 1 tsp Baking Soda

Preheat the oven to 220°C. Beat the egg and yolk with the sugar on high speed until frothy. Add salt, butter, milk, orange juice, zest, and raisins. Mix the flour with baking powder and baking soda and knead into the egg mixture. Dust the dough with a little flour, divide into 12 pieces, and shape into scones.

Place the dough pieces spaced apart on a baking sheet. Whisk the egg white with a fork and brush the scones with it. Bake for about 15 minutes in the preheated oven until lightly browned. Remove from the oven and cool on a wire rack.
