Savory Salmon and Leek Muffins with Walnuts from Spoonsparrow are a protein-rich clean-eating snack for fish lovers.
Ingredients
- 1 bunch Leek
- 200 g smoked salmon
- 2 Eggs
- 4 tbsp olive oil
- 50 ml Milk (3.5% fat)
- 200 g yogurt (3.5% fat)
- 4 sprigs thyme
- 1 Handful Parsley (5 g)
- Salt
- Pepper
- 1 tsp Baking powder
- 250 g Spelt Whole Grain Flour
- 50 g walnuts

Clean, wash, lengthwise halve and slice the leek into fine strips. Also slice the salmon into strips.

Mix eggs with oil, milk and yogurt well. Wash, dry shake, pluck and chop thyme and parsley. Add herbs to the egg mixture and salt and pepper.

Mix baking powder with flour and fold into the egg-herb mixture. Chop walnuts and carefully fold with leek and salmon strips. Grease muffin tins if necessary and distribute the mixture evenly into 12 molds. Bake in a preheated oven at 200 °C (180 °C convection; Gas: level 3) for about 25 minutes.
