Roasted Almonds

Ingredients

  • 125 g raw cane sugar
  • 0.5 tsp Cinnamon powder (Ceylon)
  • 2 pinches vanilla powder
  • 1 pinch salt
  • 200 g Almond kernels (with skin)

Instructions

    Combine warm water, sugar, cinnamon, vanilla and salt in a pan and simmer over medium heat until the sugar has completely dissolved.

    Add almonds and bring to a boil while stirring constantly.

    Cook almonds in the sugar water over medium to high heat until the liquid has evaporated. Stir several times with a wooden spoon.

    As soon as the liquid has evaporated, the sugar will crystallize (almonds will be white). Then reduce the temperature to medium heat and stir the almonds until the sugar begins to melt slightly and the almonds have a slight sheen.

    Immediately spread the roasted almonds on a baking sheet lined with parchment paper. Separate the almonds with two forks and let them cool.
