Apple Pastries

Ingredients
- 200 g whole wheat flour (+ extra for rolling)
- 100 g Ground Almonds
- 2 tbsp brown sugar
- 1 pinch salt
- Cinnamon
- 150 g cold butter
- 2 Apples
- 1 pinch mace
- 1 tbsp honey
- 1 egg
- 1 tbsp almond flakes

Mix flour, ground almonds, sugar, 1 pinch salt and 1 pinch cinnamon in a bowl. Add cold butter in pieces and knead everything quickly into a smooth dough. Shape the dough into a ball and let it rest covered in the refrigerator for 30 minutes.

Meanwhile, wash, quarter and remove the core from the apples. Finely dice the apple quarters. Place them in a pot with 50 ml of water, add ½ tsp cinnamon and a pinch of mace, stir in honey. Simmer over medium heat for about 5 minutes, stirring constantly. Thicken if necessary with a little flour. Remove from heat, set aside and let cool.

Roll out the dough on a floured surface to about 0.5 cm thick and cut out circles with a diameter of 15 cm. Place the dough circles on a baking sheet lined with parchment paper. Place 1 tbsp of apple filling in the center of each dough circle. Fold them into a half-moon shape and gently press the edges together with a fork.

Whisk the egg and brush the apple pastries with it. Slightly crush the shaved almonds and sprinkle the apple pastries with them. Bake in a preheated oven at 200 °C (fan: 180 °C; gas mark 3) for 15–20 minutes. Remove from oven and let cool.
