Healthy Oat Flake Cookies from Spoonsparrow: Healthy snacking with these cookies!
Ingredients
- 2 very ripe bananas
- 160 g fine oat flakes
- 2 tbsp peanut butter (with peanut pieces)
- 0.5 Vanilla bean
- 1 tsp cinnamon

Mash the bananas until they become a puree.

Mix the mashed bananas with peanut butter, then add the oat flakes.

Halve the vanilla bean lengthwise and scrape out the vanilla seeds with a knife. Season the dough with cinnamon and vanilla.

Shape small balls from the mixture with your hands. Place them on a baking sheet lined with parchment paper and flatten them. Bake for about 12 minutes in a preheated oven at 175 °C (150 °C fan; Gas: Mark 2) and then let them cool completely.
