Savory Potato Waffles

These savory potato waffles with yogurt and radishes from Spoonsparrow are a real spring delight.
Ingredients
- 700 g cooked potatoes (from the day before)
- 2 Eggs
- 80 ml oat drink (oat milk)
- 150 g Whole wheat flour
- Salt
- pepper from the mill
- a pinch of grated nutmeg
- 40 g mixed herbs (e.g. parsley, sage, thyme, dill)
- 2 tbsp olive oil
- 1 Spring onion
- 5 radishes
- 30 g hazelnuts
- 300 g Yogurt (3.5% fat)
Instructions

Mash the potatoes. Add eggs, oat drink, flour, salt, pepper and nutmeg and mix well. Wash, dry, pluck and finely chop the herbs. Stir into the potato mash. Add a little olive oil to the hot waffle iron. Bake 6-8 waffles gradually.

Meanwhile, peel, wash and slice the spring onions and radishes. Roughly chop the hazelnuts. Serve the savory potato waffles with some yogurt as well as spring onions, radishes and hazelnuts sprinkled on top.
