Ingredients

  • 200 g salad cucumber
  • 300 g Greek yogurt
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 3 eggs
  • 500 ml milk
  • 300 g flour
  • 1 tsp Baking powder
  • butter (for frying)
  • paprika cubes (for garnish)
  • spring onions (roasted rings for garnish)

Instructions

    For the yogurt dip, peel and finely dice the cucumber. Mix with yogurt and olive oil, season with salt and pepper. For the pancakes, whisk eggs, milk, flour, and baking powder together, seasoning with salt. Let the batter rest for about 20 minutes.

    Heat butter in a pan and pour small portions of batter to form pancakes. Cook at medium heat for about 3 minutes per side. Drain on paper towels. Plate on dishes, top each with a dollop of yogurt dip, and garnish with paprika cubes and roasted spring onions.
