Banana Bread with Nuts
The banana bread with nuts from Spoonsparrow comes without added sugar.
Ingredients
- 1 cube yeast
- 300 g whole wheat flour
- 120 g spelt flour (Type 630)
- 0.5 tsp Salt
- 150 g ripe bananas (1 ripe banana)
- 80 g pecan nuts
- 2 tbsp neutral vegetable oil

Crush the yeast and mix with 5 tbsp lukewarm water. Combine both flours with the salt, place in a bowl, press a well in the center, add the yeast, dust with a little flour, and let rise for 15 minutes.

Meanwhile peel the banana and mash it with a fork. Roughly chop the nuts. Gradually stir the mashed banana, nuts, oil, and 120–160 ml lukewarm water into the flour mixture, kneading until smooth. Shape the dough into a ball, cover with a cloth, and let rise in a warm place for 1 hour until doubled in volume.

Afterward, knead the dough on a lightly floured surface, transfer it to a greased loaf pan, and rest covered for another 15 minutes.

Bake the bread in a preheated oven at 180 °C (fan 160 °C, gas: level 2–3) on the lower or middle rack for about 1 hour. Remove from the pan and cool on a wire rack.
