Filled Pancakes à la Noord Hollander

Ingredients

  • 4 eggs
  • 250 ml milk
  • 120 g flour
  • Salt
  • 3 Tbsp plant oil
  • 200 g Noord Hollander Premium Gouda (Creamy Spicy)
  • 400 g beef fillet
  • 2 shallots
  • 1 red bell pepper
  • freshly ground pepper

Instructions

    Whisk eggs, milk, flour and salt into a pancake batter. In 2 tbsp heated oil, cook four thin pancakes one by one. Set pancakes warm.

    Grate the cheese. Pat the fillet dry and slice into strips. Peel the shallots. Halve the bell pepper, clean it, wash it and dice with the shallots.

    Heat remaining oil, add the fillet strips, sear and remove. Add the shallots and diced pepper to the pan fat and sauté. Return the fillet and cheese, letting the cheese melt slightly.

    Season the mixture with salt and pepper, spread on the pancakes, roll tightly. Slice the rolls diagonally or halve them as desired and serve with a colorful salad.
