Sandwich Cake with Jam Filling

- 5 eggs
- 1 pinch salt
- 200 g sugar
- 150 g flour
- 150 g cornstarch
- 1 tsp Baking powder
- 250 g butter
- 2 tbsp lemon juice

- 200 g powdered sugar
- 1 tbsp Lemon Juice
- 150 g currant jam (or blackberry jam)

Grease and flour the loaf pan well. Beat the eggs with salt and sugar until creamy. Mix flour, cornstarch and baking powder, then stir in spoonfuls into the sugar mixture. Melt butter in a pot and whisk it into the batter in a thin stream. Stir in lemon juice. Pour the batter into the pan and bake for about 1 hour at 175°C until golden yellow (do the toothpick test!). Let the cake rest in the pan for 10 minutes, then turn out and cool.

For the glaze, whisk powdered sugar with lemon juice and water as needed to a smooth consistency. Cut the cake twice crosswise and fill with jam. Brush the cake with the glaze and let it dry.
