Ingredients
- 125 g butter
- 75 g sugar
- 1 egg yolk
- 2 tbsp crème fraîche
- 1 tsp lemon zest (grated, untreated)
- 150 g flour
- 100 g potato starch
- Salt
- 1 tsp Baking powder
- blueberry jam
- Apricot jam
- Currant jelly
- powdered sugar
Instructions

Cream butter, sugar, egg yolk, crème fraîche and lemon zest together. Mix flour, potato starch, a pinch of salt and baking powder, then quickly fold into the butter cream and knead into a smooth dough. Cover and refrigerate for 2 hours.

Roll out the dough between two sheets of cling film to about 3 mm thickness. Cut roughly 30 stars (7 cm and 5 cm) each and place on a parchment-lined baking sheet. For the smaller stars, cut a mini star in the center.

Bake in a preheated oven at 200°C (middle rack) for 8-10 minutes until pale yellow.

Remove, cool, and lift from the tray. Spread some jam in the middle of the larger stars, place smaller stars with their star hole on top, and dust with powdered sugar.
