Raspberry Star

Ingredients
- 2 ginger plums (pickled in syrup, from the jar)
- 200 g butter
- 125 g powdered sugar
- 1 egg
- 1 pinch salt
- 350 g flour
- flour for dusting
- 250 g raspberry jam
- 2 tbsp raspberry liqueur (if needed)
- 100 g powdered sugar

Finely dice the ginger plums. Knead butter with powdered sugar, egg, salt, ginger, 3 tbsp ginger syrup and flour. Wrap dough in cling film and chill for 1 hour. Preheat oven to 200 °C. Roll dough out to 2 mm thickness on a lightly floured surface and cut into star shapes (about 4‑5 cm diameter). From the remaining stars use a smaller cutter to make circles or stars.

Place all cookies on parchment paper-lined baking sheet, bake at 200 °C for about 5 minutes. Let cool. Dust thick‑cored cookies with powdered sugar. Warm jam with raspberry liqueur if desired. Spoon 1–2 tsp jam into the center of each holeless cookie, place a hollow cookie on top. Let dry.
