- 8 untreated lemons
- coarse Sea salt

Rinse lemons hot, pat dry, lightly score lengthwise into quarters and press about 1 tsp of salt into each cut. Layer lemons in a jar and pour boiling water over them until fully covered. Seal the jar and store for 4-5 weeks in a cool dark place.

Afterward remove lemons, quarter them, and serve arranged on a glass filled with salt.
