Marinated Mixed Onions in Red Wine

Ingredients
- 300 g shallots
- 400 g silver onions
- 500 g smaller red onions
- 300 g smaller white onions
- 70 g sea salt
- 750 ml red wine vinegar
- 300 ml dry red wine
- 3 bay leaves
- 450 ml water
- 2 tbsp mustard seeds
- 5 tbsp sugar
Instructions

Blanch the onions in boiling water briefly and shock them with cold water, then peel, cut in half if necessary, and mix with salt in a bowl. Let stand for at least 8 hours. Afterwards rinse the onions well and pat dry.

Fill the prepared jars with the onions. In a pot combine vinegar with wine, mustard seeds, bay leaves, and sugar and bring to a quick boil.

Pour over the onions into the jars and seal immediately. Keep in a dark place for 4 weeks.
