Salsa Verde with Lemon

A fresh herb salsa verde featuring lemon zest and a bright green color, perfect as a side dish or topping for grilled meats and vegetables.

Ingredients

  • 1 bunch parsley and basil
  • 6 stalks mint and tarragon
  • 1-2 cloves garlic
  • 1 onion
  • 12 tbsp olive oil
  • 1 tbsp capers
  • 6-8 tbsp white wine vinegar
  • salt, freshly ground pepper
  • 1 lemon

Instructions

    Rinse the herbs, shake them dry, and pluck the leaves from the stems. Peel the garlic and onion and roughly chop them.

    Blend the herbs, garlic, onion, olive oil, and capers in a blender until smooth. Stir in the vinegar and season with salt and pepper.

    Wash the lemon, grate its zest into thin strips using a zester, mix the zest into the salsa, and transfer the mixture to a well-sealed jar.
