Ingredients

  • 1 large green cauliflower
  • 1 splash white wine
  • 2 tbsp butter
  • 2 tbsp flour
  • 400 ml milk
  • 100 g grated cheese
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 1 tsp dried thyme
  • 2 slices toast bread

    Cut the cauliflower into florets, rinse and blanch in salted water for about 2-3 minutes until very firm. Drain and place in a baking dish. Add a splash of white wine.

    Whisk butter and flour together in a saucepan, then gradually add milk while stirring until thickened. Stir in cheese and thyme, season with salt, pepper, and nutmeg. Spread over the cauliflower florets and sprinkle diced toast bread on top. Bake in a preheated oven at 180°C for about 20 minutes to gratinate.
