A perfect after-work dish – quick to make, healthy, and made with fresh ingredients.
Ingredients
- butter (for the pan)
- 800 g cauliflower florets
- Salt
- 200 ml heavy cream (at least 30% fat)
- 100 ml milk
- 100 g freshly grated Emmental cheese
- 2 Eggs
- pepper (ground)
- nutmeg
- 2 slices white bread (crumbed)

Preheat the oven to 180°C fan. Butter a heat‑proof dish or pan.

Wash the cauliflower florets and blanch in salted water for about 2 minutes. Shock, drain, and fill the buttered dish. Whisk together cream, milk, cheese, and eggs; season with salt, pepper, and nutmeg, then pour over the cauliflower. Dice the bread, sprinkle on top, and bake in the oven for 25–30 minutes until golden brown.
