Vegetable-Filled Pasta Rolls

Ingredients
- 300 g flour
- 3 small eggs
- Salt
- 3 tbsp Lemon juice
- 350 g cauliflower florets
- 400 frozen peas
- 40 g Butter
- 1 tbsp flour
- pepper (ground)
- 0.5 tsp grated lemon zest
- 1 tbsp basil pesto (jar)
- 50 g crème fraîche
- 2 tbsp oil
Instructions

Process flour, eggs, salt and 1 tbsp lemon juice in a food processor into a firm dough. Cover with plastic wrap and rest for 15 minutes.

Steam cauliflower florets in lightly salted water over medium heat for about 4 minutes until just tender.

Sauté peas in butter over medium heat for 2 minutes, then dust with flour, season with salt, pepper, lemon juice and zest, puree and let cool. Stir in pesto and crème fraîche.

Divide dough into six portions and roll each on a floured surface to sheets of about 20 x 25 cm. Spread pea purée, leaving a small border. Arrange cauliflower over the purée, roll up the dough and seal the ends.

Place rolls in a greased baking dish, brush with oil and bake in a preheated oven at 180°C (mid rack) for about 30 minutes.
