Salmon Wrapped in Dough with Leek

Ingredients

  • 600 g salmon fillet with skin (4 fillets)
  • 200 g Flour
  • 1 egg
  • 1 yolk
  • 200 ml water
  • Salt
  • 1 red chili pepper (finely chopped)
  • oil (for the fryer)
  • Lemon juice
  • 3 stalks leek
  • 2 tbsp butter
  • Salt
  • Pepper

Instructions

    Halve leeks lengthwise, fan out, wash and drain. Remove roots and slice into thin strips. Sauté leeks in a little butter, salt, and pepper.

    Wash chili, cut lengthwise, deseed, remove white membrane, finely dice. Clean fish, season with lemon juice and salt.

    Whisk 100 g flour with egg, yolk, water, salt, and chili into a smooth dough; let rest briefly.

    Preheat fryer to 180°C.

    First coat fish in remaining flour, then roll in dough. Fry immediately until golden yellow, drain on paper towels. Spread leeks on preheated plates. Place salmon on leek bed and garnish with chilies as desired.
