Ingredients

  • 8 lamb chops
  • 800 g spinach
  • Salt
  • 2 Garlic cloves
  • 4 onions
  • 4 tbsp olive oil
  • 400 g cocktail tomatoes
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash and pat dry the chops. Wash, trim, and blanch the spinach in salted water in portions. Shock, drain, and roughly chop. Peel and finely mince the garlic. Peel the onions and cut into rings. Slowly brown in 2 tbsp oil for about 10 minutes. Wash the tomatoes and season them with salt and pepper like the lamb. Combine all in a grill pan with the remaining oil and cook for 5-6 minutes, turning the meat once.

    Add the minced garlic and spinach to the onions and sauté together for 1-2 minutes. Season with salt and serve the lamb and tomatoes on plates.
