Ingredients

  • 2 large eggplants
  • Salt
  • 4 red bell peppers
  • 6 tbsp Olive oil
  • black pepper (freshly ground)
  • 4 Salmon fillets (about 125 g each)
  • 2 tbsp lemon juice
  • 1 handful parsley (for garnish)
  • 4 lemon slices (for garnish)

Instructions

    Wash the eggplants, trim ends and slice into 1 cm thick rounds. Sprinkle with a little salt and set aside. Wash the bell peppers, halve them and remove white membranes and seeds.

    Preheat the grill. Pat the eggplant dry with paper towels. Season both vegetables with salt, pepper, and brush with about 2–3 tbsp olive oil. Grill on high heat, turning several times, for about 10 minutes. Rinse the salmon, pat dry, drizzle with lemon juice, season with salt and pepper. Wrap each fillet in foil, drizzle with 1 tbsp olive oil, seal the packets and grill for 5–7 minutes.

    Arrange the grilled eggplant and bell pepper slices on plates and place the salmon fillets on top. Garnish with parsley and lemon slices.
