Lamb Chops with Vegetables

Ingredients
- 4 Spring Onions
- 2 carrots
- 200 g Sugar snap peas
- 8 lamb chops
- 2 fresh garlic cloves
- 5 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 2 tbsp freshly chopped basil
- 1 Tbsp freshly chopped thyme
- 1 tsp lemon juice
- 60 ml Marsala wine
Instructions

Wash, trim and cut the spring onions into 6-8 cm pieces. Peel the carrots and slice them diagonally. Wash, trim and cut the sugar snap peas into 2-3 cm pieces.

Rinse the lamb chops and pat dry. Peel and finely chop the garlic. Mix with 3 tbsp oil and brush onto the lamb. Season with salt and pepper and grill in a hot skillet for 5-6 minutes.

Sauté the vegetables in a hot pan with the remaining oil for 4-5 minutes until golden brown. Season with salt and pepper, then sprinkle the herbs on top and finish with lemon juice.

Remove the lamb from the pan and deglaze the drippings with Marsala wine. Reduce the sauce and brush it onto plates. Arrange the vegetables over the lamb and serve.

Optionally add grilled tomatoes and zucchini rolls as desired.
