Salmon with Mango Salsa

Ingredients
- 2 cloves garlic
- 100 ml lemon juice
- 2 tbsp white wine vinegar
- 2 tbsp Soy sauce
- 2 tbsp olive oil
- 2 tsp freshly grated ginger
- chili powder
- 4 salmon steaks (180 g each)

- 1 Mango
- 1 Avocado
- 1 tbsp finely chopped coriander leaves
- 4 tbsp Lemon juice
- Salt
- 1 small frisée salad
Instructions

Peel the garlic. Mix lemon juice with vinegar, soy sauce, oil, ginger and chili, then squeeze the garlic into the mixture.

Wash, pat dry, and place salmon steaks in a shallow dish. Pour the marinade over them and marinate for about 1 hour.

For the salsa, peel the mango, remove the flesh from the pit, and dice it.

Peel the avocado, halve it, remove the seed, and dice it as well.

Combine mango, avocado, coriander and lemon juice; season with salt to taste.

Wash the salad, rinse, dry in a spin dryer, and tear into small pieces.

Preheat the grill. Remove salmon from the marinade, pat dry, season with salt, and grill each side for about 3-4 minutes.

Plate the grilled salmon with mango salsa and frisée salad and serve immediately.
