Salmon with Lemon, Potatoes and Sheep Cheese

Ingredients
- 800 g waxy potatoes
- 100 ml dry white wine
- 200 ml vegetable broth
- Salt
- Pepper
- 200 g feta
- 1 untreated lemon
- 4 salmon fillets (≈180 g each)
- 2 tbsp olive oil
- dill sprigs (for garnish)

Preheat the oven to 180°C fan.

Peel the potatoes, slice them and place in a baking dish. Mix wine with broth and season with salt and pepper. Pour over the potatoes and bake for about 35 minutes. During the last 15 minutes crumble feta on top. The potatoes should be tender and most liquid absorbed.

Wash the lemon hot, dry grate it and cut into slices. Place on a small sheet of parchment and bake with the potatoes for about 15 minutes to lightly dry them.

Rinse the fish, pat dry and season with salt and pepper.

In a non-stick pan, cook each side slowly for 3-4 minutes until golden brown.

Arrange the potatoes on plates and place salmon fillets on top. Serve garnished with dill and lemon slices.
