Salmon with Mango Chutney

Ingredients
- 4 slices salmon fillet
- 3 tbsp Lemon juice
- 1 tbsp flour
- Salt
- freshly ground pepper
- 2 tbsp oil
- 1 Avocado
- 0.25 pineapple
- 2 ripe mangoes
- 1 piece fresh ginger
- 2 red chilies
- 4 tbsp white wine vinegar
- 2 tbsp honey
- 4 tbsp chopped fresh coriander

Clean the salmon fillets and drizzle with lemon juice. Season the fillet pieces with salt and pepper, then lightly coat in flour. Heat a pan with oil and sear the salmon fillets briefly on both sides. Wrap them in foil and bake at 80°C for 5 minutes in a preheated oven.

Thinly peel the mangoes, separate the flesh from the pit, and cut into ~2 cm pieces.

Peel and finely chop the ginger. Halve the chilies, remove seeds, wash, and finely chop. Combine mango pieces with chopped chili, vinegar, ginger, honey, and 100ml water in a pot; simmer over low heat for 8 minutes. Cover and cook another 10 minutes.

Quarter the pineapple and remove the core. Slice the quarters into rounds. Peel the avocado, remove the pit, and cut into wedges.

Serve the salmon fillet with chutney on a preheated plate. Sprinkle chopped coriander and garnish with pineapple slices and avocado strips.
