Salmon Fillets and Ginger Vegetables

- 4 salmon fillets (about 250 g each)
- 2 stalks leeks (only the white part)
- 1 large carrot
- 5 cm ginger (fresh)
- 4 tbsp butter
- 1 lemon
- Salt
- Pepper
- 50 ml Vegetable broth
- 1 tbsp fish sauce

Wash, trim and cut the leek into narrow strips lengthwise. Peel the carrot, shave it lengthwise into thin slices and then cut those into strips. Peel the ginger and similarly shave it into thin slices and then cut into strips.

Sauté the vegetables in 2 tbsp butter, pour in broth and steam covered for about 5 minutes. Meanwhile, cook the salmon in the remaining butter over medium heat, slowly searing both sides. Halve the lemon, cut one half into wedges (for garnish) and squeeze the other half. Add the juice to the vegetables, continue steaming for another 2-3 minutes and season with salt, pepper and fish sauce. Plate the salmon on preheated plates, top with the vegetables, garnish with lemon wedges and serve immediately.
