Salmon with Lemon

- 4 lemons (unprocessed)
- 8 small tarragon sprigs
- 800 g salmon fillet (4 fillets) with skin
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- 2 tbsp butter

Wash the lemons, juice 2 of them, slice the rest into thin rounds. Wash and dry shake the tarragon. Season the salmon with pepper, drizzle with lemon juice and salt. Heat the oil with butter and sear the fish skin side down for 2-3 minutes over low heat.

Place half of the lemon slices on a baking sheet in four portions, lay one sprig of tarragon on top, and set the fish over it. Cover the fish with tarragon and lemon, drizzle remaining fat over it. Cover everything with foil and bake in a preheated oven at 220°C for about 10 minutes until cooked through. Plate the salmon with lemons on warmed plates and serve.
