Salmon with Capers Sauce and Potatoes

Ingredients
- 2 small onions
- 0.5 bunch Parsley
- 1 tbsp butter
- 2 tsp flour
- 200 ml vegetable broth
- 150 g Sour cream
- 2 tbsp capers
- 4 salmon fillets (about 160 g each, skinless)
- juice of one lemon
- Salt
- ground pepper
- 2 tbsp butter
- 800 g sweet potatoes

Drizzle salmon with lemon juice and season with salt and pepper.

Wash potatoes thoroughly and cook in salted water for about 25 minutes.

Peel onions, cut lengthwise into halves, then slice into strips.

Wash parsley, shake dry, finely chop the leaves.

Heat 1 tbsp butter in a pot, add onion strips and sauté until translucent. Sprinkle flour, stir briefly, then pour in broth while stirring and mix in sour cream and 1 tbsp capers. Simmer gently for 10 minutes, seasoning with salt and pepper.

Pan‑fry salmon in hot butter over medium heat for about 3 minutes per side.

Drain potatoes before serving. Stir parsley and remaining capers into the sauce, taste again.

Plate salmon with potatoes, spoon some sauce over, and optionally add watercress.
