Ingredients

  • 500 g salmon fillet (very fresh)
  • 2 untreated lemons
  • 1 tsp Honey
  • dill sprigs
  • 2 tbsp grape seed oil
  • Sea salt
  • pepper (ground)

Instructions

    Wash the salmon, pat dry and slice into thin pieces.

    Trim the ends of the lemons and reserve for garnish. Cut 12 thin slices from each lemon and juice the remainder. Arrange four glasses along the glass walls with the lemon slices. Mix juice with honey and grape seed oil. Toss salmon slices in the mixture and season with salt. Add dill sprigs and layer loosely in the glasses. Refrigerate for about 15 minutes, then season with freshly ground pepper and decorate with lemon caps before serving.
