Salmon with Honey and Balsamic Vinegar

Ingredients
- 500 g salmon fillet
- 1 tbsp Olive Oil
- 2 tbsp balsamic vinegar
- 1 tbsp liquid honey
- Salt
- Pepper
- 4 Spring Onions
- 1 tsp butter

Rinse the salmon fillet under cold water, pat dry and cut into four equal pieces.

Whisk together oil, vinegar and honey, season with salt and pepper. Brush the salmon pieces with the mixture and cover for 2 hours in the refrigerator.

Meanwhile wash, trim and dry the spring onions, then slice them diagonally into thin rings.

Heat butter in a pan and sear the salmon on high heat until browned all around. Reduce the heat and cook the fish for about 10 minutes, brushing it with the remaining sauce occasionally. Add the spring onions a few minutes before the end of cooking and sauté together. Serve immediately.
