Chicken on Rice with Tomatoes

Ingredients
- 300 g natural long-grain rice
- Salt
- 6 tomatoes
- 3 Stalks Parsley
- 600 g skinless chicken breast fillets (pre-cooked)
- Pepper
- 1 tbsp Olive Oil
- 3 tbsp pine nuts
- 1 tsp butter
Instructions

Cook the rice in salted water according to package instructions.

While the rice cooks, wash the tomatoes, quarter them, remove seeds and dice into small cubes. Wash the parsley, shake dry and finely chop the leaves.

Rinse the chicken fillets under cold water, pat dry, cut into 2 cm cubes, season with salt and pepper. Heat oil in a pan and brown the chicken cubes over medium heat.

Roast the pine nuts in a hot, fat-free pan for 3 minutes at medium heat. Add butter, let it melt, then stir in rice and tomatoes, seasoning with salt and pepper. Finally mix in parsley and adjust seasoning. Plate the mixture, arrange the chicken cubes on top, and serve.
