Orange Couscous
Healthy cuisine is also appreciated in Arabia: The orange couscous is high in protein and fiber and packed with vitamins and minerals.
Ingredients
- 200 g organic orange (1 organic orange)
- Salt
- Pepper
- a pinch ground clove
- 250 g couscous
- 400 ml Mediterranean vegetable broth
- 320 g tomatoes (4 tomatoes)
- 2 ripe avocados
Instructions

Wash the orange hot, dry it and peel half of its zest into fine strips using a zester.

Halve the orange and squeeze out the juice.

In a bowl whisk 75 ml orange juice with salt, pepper, and clove powder for the salad dressing.

Add couscous, vegetable broth, and half of the orange zest to a pot, bring to a boil, then stir. Simmer covered over low heat for 5-6 minutes.

Meanwhile wash the tomatoes, cut off the stem ends in a wedge shape, and slice them into strips.

Halve the avocados, remove the pits, peel the halves, and cut the flesh into thin strips.

Gently mix the avocado and tomato strips with the orange dressing and season the salad with salt and pepper.

Season the couscous with salt, arrange it on a plate, and sprinkle with the remaining orange zest. Place the avocado-tomato salad beside the couscous.
