Whole Wheat Pasta with Mushroom Tomato Sauce

Ingredients
- 500 g whole wheat pasta (e.g., penne or fusilli)
- Salt
- 500 g small mushrooms
- 300 g cherry tomatoes
- 20 g Parsley (1 bunch)
- 2 shallots
- 1 tbsp Olive Oil
- black pepper
- 80 g sour cream (4 tbsp)
Instructions

Cook the pasta in boiling salted water according to package instructions until al dente. Drain and set aside, reserving some pasta water.

While the pasta cooks, clean the mushrooms and cut them into smaller pieces if needed. Wash and halve the tomatoes. Rinse the parsley, shake dry, pick off leaves and chop. Peel and finely chop the shallots.

Heat oil in a pan. Sauté the mushrooms and shallots for 3–4 minutes until golden, seasoning with salt and pepper.

Mix sour cream with parsley, salt, pepper, and 2–3 tbsp of reserved pasta water. Combine the pasta, tomatoes, and mushrooms. Serve immediately with a drizzle of the sour cream mixture.
