Salmon Tartare

Fresh salmon tartare made with crisp vegetables and a creamy sauce.
Ingredients
- 400 g Salmon fillet
- 2 shallots
- 3 cornichons (size varies)
- 1 EL olive oil
- salt (white pepper)
- lemon juice (to taste)
- parsley (cress)
- 0.5 cucumber (cut into strips)
- 1 handful salad (arugula, frisee, etc.)
- 1 egg (boiled)
- 3 EL cocktail sauce
- 1 EL ketchup
- 100 ml heavy cream
Instructions

Clean the salmon fillet and dice it into small cubes; peel and finely dice the shallots and cornichons. Mix all ingredients together.

Season with pepper, salt, and lemon juice. Chill for 30 minutes. Combine the cocktail sauce with cream and ketchup to create a glossy topping. Pour this over a plate, press the salmon mixture into a ring mold, place it on top of the sauce, garnish with cucumber strips, herbs, and salad, then top with a boiled egg before serving.
