Salmon Cream and Goat Cheese

- 0.5 bundle chives
- 200 g goat fresh cheese
- 4 tbsp crème fraîche
- Salt
- pepper (ground)
- 1 splash Lemon juice
- 120 g smoked salmon (slices)
- 80 g plain cream cheese
- 800 g crème fraîche
- 3 tbsp crème fraîche
- 1 splash Lemon juice
- 6 iceberg lettuce leaves

Wash the chives, shake dry, set aside a few stems for garnish and cut the rest into fine rolls. Blend goat fresh cheese with crème fraîche in a blender until smooth, season with salt, pepper and lemon juice, then fold in the chive rolls. Divide the mixture among 4 glasses and refrigerate.

For the salmon cream dice the salmon finely. Blend cream cheese with sour cream, crème fraîche and salmon in a blender until smooth. Season with salt, pepper and lemon juice and spread over the goat cheese layer. Wash the lettuce leaves, dry, cut into strips and arrange on top of the layered dish. Serve garnished with chive stems.
