Salmon Tartare on Baguette

Fresh salmon tartare served on toasted baguette slices, garnished with lime wedges and arugula salad – a light, refreshing dish from the sea fish category. Try this and other recipes from Spoonsparrow!

Ingredients

  • 200 g very fresh salmon (or smoked salmon)
  • 1 Spring onion
  • 1 small piece lemongrass
  • 1 tsp Dijon mustard
  • Salt
  • Pepper
  • 1 Lime (juice)
  • a handful arugula
  • 1 small baguette
  • 1 tbsp butter
  • 2 limes (cut into wedges)

Instructions

    Dice the salmon finely. Wash, trim and slice the spring onion into thin rings. Peel and finely chop the lemongrass. Marinate the salmon with the spring onions, lemongrass, mustard, salt, pepper, and lime juice; let it rest for 5-10 minutes.

    Wash and dry the arugula salad. Slice the baguette into 12 pieces and butter them. Arrange the salmon tartare on the baguette slices atop the arugula salad. Plate the bites together and serve with lime wedges.
