Salmon Patties with Mango Salsa

Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 5 g Butter (1 tsp)
  • 500 g salmon fillet
  • 10 g parsley (0.5 bunch)
  • 30 g whole grain breadcrumbs (3 tbsp)
  • Salt
  • 2 tbsp Lime juice
  • Pepper
  • 1 tbsp Olive Oil
  • 1 cucumber
  • 300 g small mango (1 small mango)','10 g coriander (0.5 bunch)','1 tbsp grape seed oil','a pinch raw sugar','40 g watercress (1 handful)

Instructions

    Peel and finely dice the shallot and garlic. Heat butter in a pan. Sauté the diced shallot and garlic over medium heat until translucent.

    Meanwhile, rinse the salmon fillet under cold water, pat dry, and finely chop. Wash and shake dry the parsley, then finely chop it. Combine the salmon, parsley, egg, onions, garlic, and breadcrumbs into a smooth batter. Season with salt, 1 tbsp lime juice, and pepper, then shape into eight small patties.

    Heat olive oil in a pan. Cook the patties for 4–5 minutes on each side until golden brown.

    In the meantime, prepare the salsa: wash the cucumber, halve it lengthwise, deseed, and dice it. Peel the mango, separate the flesh from the pit, and cube it. Wash and shake dry the coriander, then chop it. Mix all in a bowl with grape seed oil, a pinch of sugar, remaining lime juice, and salt.

    Wash and shake dry the watercress. Distribute the salmon patties and salsa over four plates.
