Salmon Tartare

Ingredients
- 400 g very fresh salmon
- 1 shallot (finely chopped)
- 8 slices daikon radish
- 50 g sun‑dried tomatoes (in oil)
- 2 tbsp chives rings
- juice of 1 lemon
- 1 tbsp grape seed oil
- 4 tsp Keta caviar
- frisée lettuce leaf for garnish
- Salt
Instructions

Finely chop the sun‑dried tomatoes. Mix with their oil to form a paste.

Wash and tear the frisée into small pieces.

Blanch the daikon radish slices in boiling salted water for about 2 minutes, shock in ice water, dry, then cut eight 8 cm circles using a round mold or ring.

Dice the salmon into small cubes. Combine with chives, shallot, grape seed oil, lemon juice and salt; taste and add Tabasco if desired.

Place an 8 cm ring on each plate (or one after another). Spread a thin layer of tomato paste at the bottom, then arrange salmon, radish slice, more salmon, radish again, finishing with a top layer of salmon. Press lightly, remove the ring, garnish with frisée and a teaspoon of Keta caviar, and serve.
