Salmon Shrimp Skewers

Ingredients
- 250 g Salmon fillet
- 2 lemons (organic quality)
- 400 g shrimp (deveined; peeled except for tail segment; 8 shrimp pieces)
- 2 red bell peppers
- 1 Zucchini
- 1 white onion
- Sea salt
- Pepper
- 1 tsp coconut oil
- 4 sprigs thyme
- 8 wooden skewers
Instructions

Rinse salmon under cold water, pat dry, cut into bite‑size cubes. Squeeze half a lemon and drizzle lemon juice over the salmon.

Rinse shrimp under cold water and pat dry.

Wash, deseed and chop bell peppers into bite‑sized pieces. Wash zucchini, trim ends and slice. Peel onion and cut into large chunks. Rinse remaining lemons, pat dry and quarter them.

Thread salmon, shrimp, bell pepper, zucchini and onion alternately onto the wooden skewers. Season with salt and pepper.

Heat coconut oil in a pan. Place the skewers with thyme on the pan and turn over at medium heat for about 4–5 minutes until golden brown.

Distribute two skewers with two lemon wedges on each of four plates.
