Salmon Cream

Ingredients

  • 250 g smoked salmon (slices)
  • 250 ml Whipping Cream
  • 400 g cream cheese
  • 1 tsp horseradish (jarred)
  • Salt
  • 1 splash Lemon juice
  • pepper (ground)
  • Keta caviar
  • dill sprigs

Instructions

    Break the salmon into pieces, finely purée with 100 ml cream and strain through a fine sieve. Whisk the puree with cream cheese and horseradish until smooth. Beat the remaining cream stiffly and fold in. Season with salt, lemon juice and pepper; spoon the mousse into four small bowls. Chill covered for about 20 minutes before serving.
