Salmon Sandwich
The Salmon Sandwich from Spoonsparrow is the perfect snack for in-between moments, combining a protein boost and healthy fats.
Ingredients
- 150 g salmon fillet
- 1 Organic lemon
- 1 tsp Honey
- 1 tsp Sweet paprika powder
- Salt
- Pepper
- 1 tbsp Olive Oil
- 4 slices whole grain toast (20 g each)
- 0.5 Avocado
- 1 tomato
- 0.5 onion
- 1 handful romaine lettuce (20 g)

Rinse the salmon under cold water and pat dry with paper towels. Wash the lemon, dry it, grate its zest finely and squeeze out the juice. Mix half of the lemon juice with the zest, honey, paprika, salt and pepper. Let the salmon marinate in this mixture for at least 15 minutes.

Heat olive oil in a pan and cook the salmon over medium heat for about 3–4 minutes per side until golden brown. Remove from the stove, let it cool slightly and flake into pieces. Meanwhile toast the bread slices in a toaster.

For the guacamole, halve the avocado, remove the pit and scoop out the flesh with a spoon. Roughly mash it in a bowl with a fork. Cut the tomato into small cubes after removing its stem, wash and pat dry. Peel, halve and finely chop the onion. Combine tomatoes, onions and avocado. Season with lemon juice, salt and pepper.

Wash the lettuce, shake off excess water and tear into bite-sized pieces. Spread guacamole on two toast slices, then layer salmon and romaine lettuce. Top each with a second slice of toast, press lightly and cut the sandwich diagonally.
